Sacher Torte

SACHER TORTE

During my viewing of travel series episode that focused on the city of Vienna, Austria; I first learned about the dessert known as Sacher Torte. Although the dessert looked delicious, I found myself wondering about the differences between a cake and a torte. We all know that a cake is a sweetened bread-like dish that serves as a dessert. A torte is a multi-layered cake filled with creams, fruit jams and jellies, mousses, buttercreams and very little flour. I have yet to learn about the origin of the torte. But I recently learned about the origin of one of the most well-known tortes - namely the Sacher Torte.

In 1832, the famous Austrian statesman, Prince Klemens Wenzel von Metternich, charged his personal chef to create a special dessert for important guests. However, the chef fell ill and the task was given to his sixteen year-old apprentice, Franz Sacher, then in his second year of training in Metternich's kitchen. Sacher created a torte made from chocolate meringue that was filled with apricot jam, covered by a dark chocolate icing and served with unsweetened whipped cream.

The guests and Prince Metternich enjoyed Sacher's dessert very much, but no further attention was paid to it. Sacher completed his training as a chef, worked in Pressburg and Budapest, before returning to Vienna. There, he opened a specialty delicatessen and wine shop. Sacher's eldest son, Eduard, carried on his father's culinary legacy by completing his own training in Vienna with the Royal and Imperial Pastry Chef at the Demel bakery and chocolatier. There, he perfected his father's torte recipe and developed the dessert into its current form. The cake was first served at the Demel and later at the Hotel Sacher, established by Eduard in 1876. Since then, the dessert remains one of Vienna's most famous culinary specialties.

Sacher Torte

Ingredients

4 1/2 ounces high-quality bittersweet chocolate, finely chopped
9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, at cool room temperature
1 cup confectioners' sugar
6 large eggs, separated, at room temperature
1 teaspoon vanilla extract
1/2 cup granulated sugar
1 cup all-purpose flour (spoon gently into cup and level top)
1 cup Apricot Glaze
Small Batch Chocolate Glaze
Sweetened Whipped Cream, for serving


Preparation

1. To make the torte: Position a rack in the center of the oven and heat to 400°F. Lightly butter a 9-inch springform pan and line the bottom with a round of parchment or wax paper. Dust the sides of the pan with flour and tap out the excess.

2. In the top part of a double boiler over very hot, but not simmering, water, or in a microwave at medium power, melt the chocolate. Remove from the heat or the oven, and let stand, stirring often, until cool.

3. Beat the butter in the bowl of a heavy-duty standing mixer fitted with the paddle blade on medium-high speed until smooth, about 1 minute. On low speed, beat in the confectioners' sugar. Return the speed to medium-high and beat until light in color and texture, about 2 minutes. Beat in the egg yolks, one at a time, scraping down the sides of the bowl. Beat in the chocolate and vanilla.

4. Beat the egg whites and granulated sugar in a large bowl with a handheld electric mixer on high speed just until they form soft, shiny peaks. Do not overbeat. Stir about one fourth of the beaten whites into the chocolate mixture to lighten it, then fold in the remaining whites, leaving a few visible wisps of whites. Sift half of the flour over the chocolate mixture, and fold in with a large balloon whisk or rubber spatula. Repeat with the remaining flour.

5. Spread evenly in the pan. Bake until a toothpick inserted in the center comes out clean, about 45 minutes. (The cake will dome in the center.) Cool on a wire rack for 10 minutes. Remove the sides of the pan, and invert the cake onto the rack. Remove the paper and re-invert on another rack to turn right side up. Cool completely.

6. To assemble: Using a long serrated knife, trim the top of the cake to make it level. Cut the cake horizontally into two equal layers. Place one cake layer on an 8-inch cardboard round. Brush the top of the cake layer with the apricot glaze. Place the second cake layer on top and brush again. Brush the top and sides of the cake with the remaining glaze. Transfer the cake to a wire rack placed over a jelly-roll pan lined with waxed paper. Let cool until the glaze is set.

7. Make the chocolate glaze (it must be freshly made and warm). Pour all of the warm chocolate glaze on top of the cake. Using a metal offset spatula, gently smooth the glaze over the cake, allowing it to run down the sides, being sure that the glaze completely coats the cake (patch any bare spots with the spatula and the icing that has dripped). Cool until the glaze is barely set, then transfer the cake to a serving plate. Refrigerate until the glaze is completely set, at least 1 hour. Remove the cake from the refrigerator about 1 hour before serving.

8. To serve, slice with a sharp knife dipped into hot water. Serve with a large dollop of whipped cream on the side.


MAKE AHEAD:
The cake can be prepared up to 2 days ahead and stored in an airtight cake container at room temperature.

Extra! Tips from Epicurious:

Quality ingredients will really make a difference in this cake. Valhrona chocolate is perfect because of its dark, almost bitter flavor. For the most authenticity, look for the Austrian brand D'Arbo apricot preserves and Austrian Stroh rum for the glaze. For the best results, be generous with the apricot glaze — don't miss a spot, and let plenty sink into the cake before you pour on the chocolate.

"THE MOVING FINGER" (1985) Review

I might as well put my cards on the table. I am not a fan of Agatha Christie's 1942 novel, "The Moving Finger". I do not regard it as one of the author's more remarkable works. In fact, I have difficulty in viewing it as mediocre. When I first learned about the 1985 adaptation of the film, I did not bother to get my hands on a video or DVD copy.

In the end, I found myself viewing the 1985 television movie, due to it being part of a box set of Jane Marple movies. Before I express my opinion of it, I might as well reveal its plot. "THE MOVING FINGER" is basically a murder mystery set in a small English town. A brother and sister from London named Gerry and Joanna Burton purchase a house in the small, quiet town of Lymstock; in order for Jerry to fully recover from injuries received in a plane crash. After settling in and meeting their neighbors, the two siblings become the latest victims of a series of anonymous poison pen letters. Unbeknownst to the Bartons and other citizens of Lymstock, the vicar's wife, Mrs. Maude Calthrop, summons her old friend, Miss Jane Marple, to help the police find the letters' writer. However, not long after Miss Marple's arrival at Lymstock, the poison pen letters take a murderous twist. Mrs. Angela Symmington, the wife of local solicitor Edward Symmington, is found dead after receiving a letter. The coroner rules her death as suicidal. Only Miss Marple believes Mrs. Symmington had been murdered. And it took a second death - the obvious murder of the Symmingtons' maid - for the officials to realize she had been right about the first murder.

One of the aspects about Christie's 1942 novel that I found so unremarkable was the actual murder that took place. It had been very easy for me to figure out the murderer's identity, while reading the novel. In fact, I managed to do so before I was halfway finished with the novel. I wish I could say that Julia Jones' adaptation made it a little more difficult for anyone to guess the murderer's identity before the movie's final denouement. But I cannot. Jones and director Roy Boulter made it easy for anyone to identify the killer, thanks to some very awkward camera directions. To make matters worse, both Jones and Boulter made the mistake of closely adapting Christie's novel. Which meant both followed the novel's narrative in which one of the characters openly approached the killer before Jane Marple could expose the latter's identity to the police. Actually, Miss Marple used one of the characters to entrap the killer. And I hate it when this form of narrative is used in a murder mystery in which the audience is supposed to be unaware of the killer's identity.

Another complaint I have regarding "THE MOVING FINGER" has to do with the romance between the dashing former pilot Gerry Burton and the victim's oldest child, twenty year-old Megan Hunter. Actually, I have mixed feeling about the portrayal of this particular romance. On one hand, I liked the fact that Megan occasionally challenged Jerry's patronizing attitude toward her. And the two actors portraying Jerry and Megan actually clicked on screen. On the other hand, I DID find his attitude patronizing. The Jerry-Megan romance almost seemed like a second-rate version of the Henry Higgins-Eliza Doolittle pairing in "PYGMALION"/"MY FAIR LADY" tale. Matters were made worse when Jerry dragged Megan to London for a day of shopping, dining and dancing. I realize that Christie and later, Jones were trying to make this sequence romantic. I found it tedious, patronizing and an unoriginal take on both "MY FAIR LADY" and "Cinderella".

Thankfully, there was another major romance featured in "THE MOVING FINGER" that struck me as a lot more mature and satisfying. I am referring to the romance between Jerry's sister, Joanna Burton and the local doctor, Welsh-born Dr. Owen Griffith. Unlike the Jerry-Megan romance, I did not have to deal with some immature take on "PYGMALION". The worst Joanna and Owen had to deal with was the latter's sister Eryl, who not only seemed slightly disapproving of Joanna, but who was also infatuated with widow of the murdered woman, Edward Symmington. In fact, the romances featured in this story seemed to offer an hint on what made "THE MOVING FINGER" enjoyable for me - the portrayal of village life in Lymstock. The movie also featured interesting characters that included the solicitor Edward Symmington and his high-maintenance wife Angela, their attractive nanny Elsie Holland, local gossip and art collector Mr. Pye, and the Reverend Guy Calthrop and his wife Maud - both friends of Miss Marple. Forget the murder mystery and enjoy the story's strong characterizations and romances. It made "THE MOVING FINGER" a lot more bearable for me.

Paul Allen's production designs struck me as solid. I thought he and his team did a pretty good job in re-creating an English village in the early-to-mid 1950s. I found Ian Hilton's photography very attractive and colorful . . . even after 29 years. Christian Dyall created some very attractive costumes for the cast - especially for Sabina Franklyn, who portrayed the sophisticated Joanna Barton. If I have one complaint, it is the hairstyle worn by
Deborah Appleby, who portrayed Megan Hunter. Quite frankly, I found her mid-1980s hairstyle in the middle of a production set in the 1950s rather startling. And I am not being complimentary.

"THE MOVING FINGER" featured some excellent performances from the cast. Joan Hickson gave her usual above-average performance as the modest elderly sleuth, Jane Marple. However, due to the amount of romance and village intrigue, her appearance seemed a bit toned down. Michael Culver gave an excellent performance as the grieving widower, Edward Symmington. I found his performance very realistic and complex. Sandra Payne was another who gave a first-rate performance as the equally complex Eryl Griffith. Sabina Franklyn gave a very attractive performance as the sophisticated Joanna Barton. Not only did she click well with Martin Fisk, who portrayed the mature and subtle Dr. Griffith, but also with Andrew Bicknell, who gave a very charismatic portrayal of the attractive Jerry Burton. Bicknell also created a very nice screen chemistry with Deborah Appleby, who portrayed the gawkish Megan Hunter. I wish I could be just as complimentary about Appleby's performance. There were times when her performance seemed solid. Unfortunately, there were times when she came off as wooden. And Richard Pearson was a delight as the gossiping Mr. Pye.

I could have easily dismissed "THE MOVING FINGER" as a loss. Thanks to Christie's original novel, it does not possess a scintillating murder mystery. In fact, I was able to solve the mystery halfway into the story, when I first read the book. In the end, the story's excellent portrayal of village life in the early 1950s and a pair of entertaining romances made "THE MOVING FINGER" enjoyable to watch in the end. The movie also benefited from some excellent performances from a cast led by Joan Hickson.

STAR TREK VOYAGER RETROSPECTIVE: (3.24) “Displaced”

I might as well be honest. I wish I could be objective about the ”STAR TREK VOYAGER” Season Three episode, (3.24) ”Displaced”. But I cannot. My feelings for this episode are too strong. Let me explain.

Lisa Klink wrote the teleplay for this episode about Voyager’s crew members being replaced, one-by-one, with aliens from an unknown race. While arguing over a Klingon workout program that Chief Helmsman Tom Paris had created for the Holodeck, the pilot and Voyager’s Chief Engineer, B’ElannaTorres, are interrupted by a strange alien that has appeared aboard ship from nowhere. This phenomenon occurs over and over again, until both Captain Janeway and Commander Chakotay realizes that this new alien race – called the Nyrians – are bent upon taking control of Voyager . . . but without the use of brute force. Eventually, the entire crew end up as prisoners on a habitat that also contains prisoners from other races whose ships and colonies were also conquered by the Nyrians in a similar manner.

Amidst the alien takeover of the ship, the continuation of the blossoming relationship between the ship’s Chief Helmsman, Lieutenant Tom Paris and Chief Engineer Lieutenant B’Elanna Torres hits a snag. In a previous episode called ”Distant Origin”, Paris had made a bet with Torres over the reason behind a ship malfunction. The Chief Helmsman won the bet and Torres was forced to participate with him in a Klingon exercise program in the Holodeck. Being inclined to avoid her Klingon heritage as much as possible, Torres resents that Paris is interested in all aspects of her entire self – both Human and Klingon. And later in the episode, both Torres and the Doctor revealed Tom’s own insecurities and his tendency to use jokes to hide them.

Temperatures seemed to have played a major role in ”Displaced”. From Paris and Torres’ heated argument over his Klingon martial arts program to the Nyrians and Torres’ low tolerance of cold temperatures, and to finally the warm reconciliation between the two future lovers inside the Holodeck. It was good to see Voyager’s crew – especially Janeway and Tuvok - work at retaking control of Voyager by utilizing the Nyrians’ teleportation system. I especially found Janeway’s ultimatums for the Nyrian leaders inside their habitat rather satisfying.

But what really made this episode rocked – at least for me – was the continuation of Paris and Torres’ courtship that began when the Chief Pilot made his first overture in ”The Swarm”, earlier in the season. By the time ”Displaced” had aired – some twenty episodes later – Paris has been in earnest pursuit of Torres. Lisa Klink had wonderfully brought out Paris’ determination to reveal to Torres, his interest in everything about her – and that included both her Human and Klingon sides – despite how she may have felt about the latter. Klink also did an excellent job of revealing the pair’s insecurities, which ended up providing many roadblocks to their romance and eventual marriage over three years later. Late Season Three and early Season Four had featured some of the best moments in the Paris/Torres relationship. At least until Season Seven. And among those gems included scenes from this episode.

Below are what I consider highlights from ”Displaced”:

*Paris and Torres’ quarrel over the Klingon martial arts program
*Tuvok’s revelation to Chakotay about his survival training experience on Vulcan
*Chakotay’s attempts to defend the ship from the Nyrians, reliving his old role as a Maquis captain
*The Doctor’s exposure of both Paris and Torres’ insecurities inside the Nyrian habitat
*Torres’ ”I’m not hostile” conversation with Harry Kim and his fearful reaction to her tone
*Paris and Torres’ frozen adventures inside another Nyrian habitat
*Janeway and Tuvok’s efforts to gain control of the Nyrians’ teleportation system
*Janeway’s confrontation with the Nyrian leaders


As I had earlier stated, I wish I could be objective about this episode. But how can I? Even after eleven years, I still love it. Lisa Klink’s teleplay seemed to feature everything – adventure, romance, humor, intrigue and rich characterization. It is easy to see why I consider ”Displaced” to be one of my favorite ”STAR TREK VOYAGER” episodes.
